Turmeric is among the most adulterated spices in India, commonly cut with metanil yellow or lead chromate for colour and with starch for bulk. Two tests take a minute. Stir half a teaspoon into a glass of warm water and leave it, genuine turmeric settles and leaves the water pale yellow, while added colour bleeds bright yellow streaks immediately. Second, press a pinch between wet fingers, pure turmeric stains the skin and feels slightly gritty, while starch adulterated powder feels smooth and washes off easily.
