Everything in this collection is single origin and unblended, which means the honey in the jar came from one forest region and one collection, not a mix of sources pooled at a processing plant. What Is in the Collection

Kombu honey is collected in the Western Ghats and is the everyday variety, floral and mild. Gulkand honey blends Damask rose petals with honey and is used for body heat and cooling, particularly through summer. Nutmix honey carries nuts and seeds suspended in honey, which makes it a practical breakfast spread. Collected in the Western Ghats

Our honey comes from the Western Ghats, one of the few regions in India where forest cover still supports genuine wild and semi wild collection. It is unblended and unheated beyond what is needed for filling, so the natural enzymes and pollen content stay in place. Crystallisation over time is normal and is a sign the honey has not been processed to death. Rose petals for Gulkand are Damask variety, layered with honey and left to mature rather than cooked with sugar. Nothing here carries added glucose syrup, colour or preservative.

Using Honey and Gulkand Well

Honey should not be added to boiling liquid, warm is fine, boiling degrades it. A spoon in warm water first thing in the morning is the most common daily use. Gulkand is taken directly by the spoon, usually one teaspoon a day, and is traditionally increased slightly in peak summer for body heat. Nutmix works on toast, dosa or straight. Honey should not be given to children under one year of age under any circumstances. Crystallisation, Storage and What Is Normal

Real honey crystallises. It happens faster in cooler months and faster in some floral varieties than others, and it is one of the more reliable signs that honey has not been heat treated to prevent it. To reverse it, stand the jar in warm water for fifteen minutes rather than microwaving, which destroys the enzymes you paid for. Never refrigerate honey, it accelerates crystallisation. Gulkand should be kept sealed and spooned out with a dry spoon, since moisture introduced into the jar will shorten its life. Colour and flavour vary between batches, which is what single origin means in practice.
